Blue Tea Cupcake Recipe
A heavenly dessert steeped in the subtle floral scent and bright hue of butterfly pea flower tea, great for tea enthusiasts and fans of unusual flavors!
Ingredients
For the Cupcakes:
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 2 large eggs
- ¼ cup milk
- 2 tbsp butterfly pea flower tea (brewed and cooled)
- 1 tsp vanilla extract
For the Blue Tea Frosting:
- 1 cup unsalted butter, softened
- 2½ cups powdered sugar
- 2 tbsp butterfly pea flower tea (brewed and cooled)
- 1 tsp vanilla extract
Optional Garnish:
- Dried butterfly pea flowers
- Edible glitter or silver pearls
Preparing Blue Tea
- Boil 1 cup of water and steep 1 tbsp of butterfly pea flowers or 1 butterfly pea flower tea bag for 5–10 minutes until the water turns a vibrant blue.
- Cool down and filter the tea.
Method
Step 1: Make the Batter
- Preheat your oven to 350°F (175°C). Prepare a cupcake tray by lining it with liners.
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the butter until creamy. Add eggs one at a time, beating well after each addition.
- Mix in the milk, brewed blue tea, and vanilla extract until smooth.
- Gradually fold in the dry ingredients and mix until combined. Do not overmix.
Step 2: Bake the Cupcakes
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
Step 3: Prepare the Frosting
- In a mixing bowl, beat the butter until light and fluffy.
- Gradually add the powdered sugar, beating well after each addition.
- Combine brewed blue tea and vanilla extract and continue whisking until the frosting becomes smooth and fluffy.
- In case the frosting is too thick, add a drop of milk. In case the frosting is too thin, then add powdered sugar.
Step 4: Decoration
- Make use of a piping bag, and your favorite tip in order to frost cooled cupcakes.
- Garnish the cupcakes with dried butterfly pea flowers, edible glitter or pearls, for an elegant finish
- Serving & Storage
- Serve immediately or store in an airtight container at room temperature for up to 2 days.
- Refrigerate for longer shelf life but bring to room temperature before serving for the best taste.
Additional Tips
To intensify the blue color, add a tiny pinch of baking soda to the brewed tea before using it in the batter.
For a color twist, squeeze lemon juice into one portion of the tea so that it gives purple shade; swirl this mixture of frosted cupcakes.
