Blue Tea Cupcake Recipe

A heavenly dessert steeped in the subtle floral scent and bright hue of butterfly pea flower tea, great for tea enthusiasts and fans of unusual flavors!

Ingredients

For the Cupcakes:

  1. 1 cup all-purpose flour

  2. ½ cup granulated sugar

  3. 1 tsp baking powder

  4. ¼ tsp baking soda

  5. ¼ tsp salt

  6. ½ cup unsalted butter, softened

  7. 2 large eggs

  8. ¼ cup milk

  9. 2 tbsp butterfly pea flower tea (brewed and cooled)

  10. 1 tsp vanilla extract

For the Blue Tea Frosting:

  1. 1 cup unsalted butter, softened

  2. 2½ cups powdered sugar

  3. 2 tbsp butterfly pea flower tea (brewed and cooled)

  4. 1 tsp vanilla extract

Optional Garnish:

  1. Dried butterfly pea flowers

  2. Edible glitter or silver pearls

Preparing Blue Tea

  1. Boil 1 cup of water and steep 1 tbsp of butterfly pea flowers or 1 butterfly pea flower tea bag for 5–10 minutes until the water turns a vibrant blue.

  2. Cool down and filter the tea.

Method

Step 1: Make the Batter

  1. Preheat your oven to 350°F (175°C). Prepare a cupcake tray by lining it with liners.

  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. In another bowl, beat the butter until creamy. Add eggs one at a time, beating well after each addition.

  4. Mix in the milk, brewed blue tea, and vanilla extract until smooth.

  5. Gradually fold in the dry ingredients and mix until combined. Do not overmix.

Step 2: Bake the Cupcakes

  1. Fill each cupcake liner about 2/3 full with the batter.

  2. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

  3. Let the cupcakes cool completely before frosting.

Step 3: Prepare the Frosting

  1. In a mixing bowl, beat the butter until light and fluffy.

  2. Gradually add the powdered sugar, beating well after each addition.

  3. Combine brewed blue tea and vanilla extract and continue whisking until the frosting becomes smooth and fluffy.

  4. In case the frosting is too thick, add a drop of milk. In case the frosting is too thin, then add powdered sugar.

Step 4: Decoration

  1. Make use of a piping bag, and your favorite tip in order to frost cooled cupcakes.

  2. Garnish the cupcakes with dried butterfly pea flowers, edible glitter or pearls, for an elegant finish

  3. Serving & Storage

  4. Serve immediately or store in an airtight container at room temperature for up to 2 days.

  5. Refrigerate for longer shelf life but bring to room temperature before serving for the best taste.

Additional Tips

To intensify the blue color, add a tiny pinch of baking soda to the brewed tea before using it in the batter.

For a color twist, squeeze lemon juice into one portion of the tea so that it gives purple shade; swirl this mixture of frosted cupcakes.
